The easiest way to use Zaubermehl is as follows:

Weigh out Zaubermehl, add water, stir – done.

It's not a classic flour that you can simply substitute 1:1 for wheat flour every time. Zaubermehl is an all-in-one mix that can replace flour, eggs, and milk in many recipes. That's why it works particularly well if you stick to our recipes at the beginning.

You can use it to make pancakes, spaetzle, bread, pizza, cakes, brownies, dumplings, gnocchi, crepes, waffles, and much more. Often, you really only need Zaubermehl and water. Depending on the recipe, other ingredients like sugar, oil, spices, potatoes, or psyllium husks may be added.

Important: Gluten-free cooking and baking behave differently than classic baking. The dough may sometimes look more liquid, more compact, or sandier than you're used to. That's normal. Many doughs only change when they swell, cook, or bake. So please don't get nervous right away – just trust the recipe.

A digital scale is your best friend when using Zaubermehl. Once you get a feel for it, you can experiment much more freely later.

These recipes are particularly easy for beginners:

Spaetzle:
Mix 210 g Zaubermehl + 160 g water, let stand briefly, and cook for about 3 minutes.

Pancakes:
Mix 100 g Zaubermehl + 130 g water + 30 g sugar and bake in a pan.
