Recipe 1: Gluten-free Kaiserschmarrn (classic)

Ingredients for 2 servings

  • 100 g magic flour
  • 150 g water
  • 2 eggs (size M)
  • 20–40 g sugar
  • Oil for frying

👉 Optional: Raisins, applesauce or plum compote

  1. Mix the magic flour, sugar and water until smooth, then gently fold in the eggs.
  2. Heat a pan, add some oil, pour in the batter.
  3. Cover and cook over medium heat until set, then turn over.
  4. Tear into pieces, fry until golden brown and serve with powdered sugar.


Recipe 2: Gluten-free Kaiserschmarrn (vegan)

Ingredients for 2 servings

  • 140 g magic flour
  • 160 g water or plant milk
  • 35 g icing sugar
  • 50 g aquafaba (chickpea water)
  • Oil for frying
  • 👉 Optional: Raisins or fresh berries

preparation

  1. Whisk aquafaba with sugar until stiff (#trusttheprocess – takes a few minutes).
  2. Mix the magic flour and water, fold in ¼ of the aquafaba, then carefully incorporate the rest.
  3. Fry the dough in an oiled pan with a lid over medium heat.
  4. Turn over, continue frying, tear into pieces and serve with powdered sugar.
